Sun-Dried Tomato Chicken
The toppings of sun-dried tomatoes and sliced fresh basil add more flavor and a pretty appearance to this chicken recipe. Here's the trick to softening the texture of sun-dried tomatoes: Buy them packed in oil, and then drain and rinse in hot water to remove oil. Chop tomatoes with a knife, or snip them into smaller pieces with kitchen shears.

Smoky Ham and Corn Salad
Fresh corn, diced deli ham and crunchy croutons are tossed with a smoky, creamy dressing in this light summer salad. Serve with a crisp glass of rosé and sliced melon.

Shrimp Caesar
While most Caesars drown the greens in a heavy dressing, this lemony version lets the taste of the shrimp shine through. Don't worry about the anchovies - they'll mellow in the dressing, giving it a rich taste that can't be duplicated.

Salmon with Pepita-Lime Butter
Lime juice, chili powder and pepitas give this salmon Mexican flair. Serve with wild rice and steamed vegetables.

Roasted Chicken Salad with Garlic Toasts
Rotisserie chickens have become all the rage in our local supermarkets—and why not? They can be the base of a quick, almost-homemade dinner in no time. Here, roasted chicken turns into an easy salad with some crusty garlic bread on the side.

Pork Chops With Herb-Mustard Butter
Delicious and easy recipe for dinner or lunch. Look for the word "loin" for the leanest cut of pork chops.

Pork Chops au Poivre
Turn your dining room into a French bistro when you dress up pepper-crusted pork chops with a rich, creamy brandy sauce. Serve with roasted sweet potato slices and green beans.

Pecan-Crusted Tilapia
Try this tasty tilapia with a simple squeeze of lemon or, if you a have a little more time, delicious Golden Rum-Butter Sauce. If you don't have a skillet large enough to hold all the fillets easily, we recommend cooking them in batches and keeping them warm in a 200° oven. You can substitute catfish, flounder, or orange roughy for tilapia.

Pan-Seared Flat Iron Steak
The trick to a great crust on this flat iron steak is to use a very hot skillet; a large cast-iron or heavy stainless steel skillet works best. Have your hood fan on high—there will be some smoke. If you can't find flat iron steak in your local market, a top blade chuck or sirloin steak will work just fine.

New England Fried Shrimp
Who doesn't love a crunchy fried shrimp? This version takes virtually fat-free shrimp out of the deep fryer and pan-fries them in a little bit of oil instead. With 9 grams of total fat and 213 calories per serving, you can feel good about enjoying them.

Italian Vegetable Hoagies
This delightfully easy, and somewhat messy, sandwich packs a punch with sweet balsamic vinegar, artichoke hearts, red onion, provolone cheese and zesty pepperoncini. We love it for dinner as well as lunch. If you're packing the hoagies to take along, keep the ingredients separate and assemble right before eating to avoid soggy bread. Serve with tomato and cucumber salad.

Ginger-Steamed Fish with Troy’s Hana-Style Sauce
This shoyu-based sauce with fresh ginger, garlic and sesame is a Hana classic. Aloha Shoyu is the preferred brand at the hotel. (We use reduced-sodium soy sauce to keep the sodium in check.) Chef David Patterson prepares the dish with onaga, a red snapper only found in the Hawaiian waters; it's tender, sweet and mild in flavor. We found that halibut and other white fish were also delicious. Serve with steamed brown rice and Green Papaya Salad.

Easy Skillet Cordon Bleu
This delicious and timeless favorite combines all the best foods into one flavorful dish! So easy, takes just about 20 minutes total to prepare.

Crab Cake Burgers
These burgers have a true crab flavor that isn't masked by fillers or strong seasoning. Serve on a bun with tartar sauce or with a lemon-juice-dressed salad of greens, sprouts and sliced peaches. This recipe works best with convenient pasteurized crabmeat, usually found in the refrigerated case near the fish counter. If you prefer lump crabmeat, cut it into small, uniform pieces.

Chicken Piccatta
This is a quick and easy chicken dinner served over rice. I can "make ahead" part of the meal by breading the chicken, then hauling kids and finishing after kids' activities. When we get home, it’s a matter of quickly cooking the chicken and reheating the rice. Simple!

Slow Cooker Pot Roast Tacos
This recipe came about by accident and has become a favorite dish in my house – namely because all the kids will eat it with no threats. Its also incredibly simple to make and is one of the few slow cooker recipes I use even in summer months.

Chicken Cacciatore
This is a quick and easy chicken dish that is made with most items you'd already have on hand.

Easy Slow Cooker Pot Roast
This is a great, easy recipe for a cold, cozy night. I feel a tiny bit guilty that it is so easy to make, I almost feel like I’m cheating! But not quite.

Pumpkin Soup
Now that the weather is finally starting to seem like fall, it’s a great time to pull out a cozy Pumpkin Soup. I typically serve this soup in a mug and just drink it – yes, my mom would be shocked at my manners, but it’s cozy! Pair it with heavy, dark bread and a blustery night and you’ll be good to go!

Pasta with Pumpkin Sausage Sauce
What I love about it is of course, it’s another cozy dinner, but it also uses different flavors. It’s also an easy dinner to multi-task as you are cooking. Once you’ve thrown the sauce together and as the noodles cook, make a salad, help with homework, break up a fight, yell at someone to “step away from technology,” separate a much needed Lego piece, and just enjoy your typical evening as you transition back into the kitchen and unwind.

Maple Ginger Glazed Chicken
I found this easy, quick recipe from one of my favorite cooking magazines, “Cook’s Country,” December/January 2008 edition. Typically I serve it with a side of rice and either a green salad or green beans.

Chicken Bean Burritos
I adapted this recipe from a Cuisine Lite Cookbook, and it has become an easy go to recipe for quick and make ahead meals. The beauty of this recipe is not only because it’s made with ingredients typically on hand, it is also really good cold.
